Healthy Breakfast Recipes

It is a commonly known saying that breakfast is the most important meal of the day. Honestly, it’s true. A healthy breakfast provides energy, lifts the mood and helps us to stay focused in the morning. However, we all tend to either avoid it or eat something fast and unhealthy. I would take a cup of tea and a biscuit on the way out, but soon I found it had exhausted me before lunchtime.

It was at this point that I began to experiment with simple and healthy breakfast recipes. The best part? You need no fancy ingredients or excessive time. In this section, I shall give you some simple yet healthy breakfast recipes, which you can make at home. These are hearty recipes that are delicious and are just the ones that will kick start your day.


1. Vegetable Upma

Upma is a favourite of South Indians and is prepared using roasted semolina (rava/sooji). It is light, and it keeps you full hours.

Ingredients:
  • 1 cup semolina (rava)
  • 2 cups water
  • 1 onion (chopped)
  • 1 carrot, beans, peas (chopped)
  • 2 green chillies
  • Curry and mustard seeds.
  • 2 tsp oil

Method:
  1. Roast semolina till light golden.
  2. Heat oil in a pan and add mustard seeds, curry leaves and green chillies.
  3. Add onion and vegetables and saute a few minutes.
  4. Add water and salt and boil.
  5. Gradually stir in the semolina that is roasted.
  6. Cook for 3–4 minutes.
It is a fast, favored and multi-coloured dish. Lightly sprinkle with lemon juice.

2. Oats and Banana Smoothie

Oats and Banana Smoothie


In a hurry in the mornings, smoothies come to the rescue. This one is creamy, healthy and naturally sweet.

Ingredients:
  • ½ cup rolled oats
  • 1 ripe banana
  • 1 cup milk (or almond milk)
  • 1 tsp honey
  • A pinch of cinnamon

Method:
  1. Combine and mix until smooth.
  2. Pour into a glass and enjoy.

It takes less than 5 minutes. This smoothie contains lots of fibre and provides an immediate energy pep. I usually prepare this ahead of meetings prior to early ones, as it helps me to forge on without feeling weighty.

3. Poha with Peanuts

Another typical Indian breakfast is called poha (flattened rice). It is not too heavy and is quite palatable.

Ingredients:
  • 2 cups poha (flattened rice)
  • 1 onion (chopped)
  • 1 potato (small, diced)
  • Green chillies, curry leaves
  • 2 tbsp peanuts
  • 1 tsp turmeric
  • 1 tsp lemon juice

Method:
  1. Gently rinse poha under water then drain and set aside.
  2. In a pan add oil, roast peanuts till they are crunchy, take them out and store.
  3. Add curry leaves, potato, onion, and curry, into the same pan. Cook till potato is soft.
  4. Add turmeric, salt, and poha. Mix gently.
  5. Serve topping with lemon juice and peanuts.

We highly recommend this recipe because it is full of energy without being oily.
